PADHIR PENI / CHIROTI





Ingredients
  • Maida/Plain flour - 1 cup
  • Rice flour - 2 tbsp
  • Butter - 2 tbsp
  • Sugar Powder - 1 cup
  • Oil
  • Cardamom Powder
  • Water


Method
  • Firstly, in a mixing bowl add all purpose flour.
  • Mix in 2 tbsp of oil/Ghee using your fingers until the flour resembles a bread crumbs texture.
  • Now knead a dough by adding little by little water make sure that the dough should semi hard (neither soft nor hard), and rest the dough for sometime.
  • Meanwhile, prepare sata i.e. 2tbsp of butter with 2 tbsp of rice flour, mix properly.
  • Now, lets go back to the dough and divide into few equal parts(as shown in image)
  • Roll each portion into thin chapati and spread the layer of  prepared sata on the chapati ( make sure that the sata should not be too liquid).

  • Now roll the chapati slowly into a log as rolled in the image.
  • Here in this step roll the rolled chapati into circular form , than roll this into the puri manner.
  • Repeat all the chapatis in the same pattern.
  • Heat the oil into medium lower the flame and add 2 to 3 puris at a time.Fry on low flame until you see golden brown crisp puris puffed up.
  • Transfer to the plate and rest for a hour or so until the oil is drained from the puri, than sprinkle sugar and cardamom powder on each. 
  • Store them in the air tight container.
